Happy Thanksgiving, everyone! I hope your day was filled with delicious food, joyful moments, and quality time with loved ones. It’s been a whirlwind of activity for me, splitting time in the kitchen at home and at my boyfriend’s house. Let’s just say there’s been no shortage of baking adventures to share!
Last weekend, I was asked to make my Spiced Apple Cake for a party. Even with a table full of desserts, it was a huge hit! I’ll admit, I got a little heavy-handed with the cinnamon in the icing and made the rookie mistake of icing the cake while it was still slightly warm. The result? A bit of a melty glaze situation—but no one seemed to notice. Sometimes, it’s best to embrace those little imperfections!
On Thanksgiving Day itself, I decided on a whim to make croissant-style rolls to accompany dinner. I’ve been wanting to try my hand at croissants again for ages, and with most of the meal prepped, it felt like the perfect opportunity. Traditional croissant recipes call for about 1 ½ cups of butter for the lamination process, but with only three sticks (plus a few tablespoons) left—and some reserved for the meal—I had to improvise.
I used two sticks of butter (about 1 cup) for the butter block and skipped the extra butter typically added to the dough. Time was tight, so I condensed the chilling time and completed two sets of folds back-to-back. The results? Absolute magic. The rolls had flaky, crispy layers that were light, delicate, and not overly buttery. Sometimes, a little experimentation yields the most delightful surprises!
